The deep green leaves have a sour taste from their oxalate content. A few sprigs is fine but several leaves could be fatal. There have been reports of toxicity and death from eating sorrel, possibly caused by the high amounts of oxalate found in sorrel. Fatal oxalic acid poisoning has been reported from sorrel soup. Can be detrimental to PKD/PLD. A quick dip in boiling water is said to diminish the oxalates. It has been written about in the time of King Henry VIII that he truly enjoyed sorrel in each and every salad that was prepared for him. . .and King Henry VIII suffered from gout. Sorrel increases gout symptoms.
