Saffron Cake with Raspberry Sauce

Ingredients Saffron Cake
-1/2 C hot water
-1/2 tsp saffron threads
-3 C spelt flour
-1/4 tsp Himalayan salt
-3 tsp baking powder
-1/2 C sweet unsalted plugra butter
-1 C beet sugar or sucanat
-2 eggs beaten
-lemon zest from 2 lemons
-1/2 C fresh lemon juice 2 lemons
Raspberry Coulis
-1 C Raspberries
-2 Tablespoons tupelo honey
-1 teaspoon fresh lemon juice
Add boiling water to saffron and steep for 30 minutes. Put in a vita mixer or food processor. Cream butter and sugar until light and fluffy; add eggs, all to food processor/vita mixer. Sift dry ingredients together. Add dry ingredients to creamed mixture, stirring just enough to moisten. Turn into two buttered and floured loaf pans (7 1/2 x 3 1/2 x 2 1/4 inches) Bake in preheated moderate oven (350 F) for 40 -45 minutes. Puree in a blender 1 cup of raspberries. Serve on the side. Garnish with a few whole raspberries. This is the lemony - est bread I have ever eaten
Aphrodisiac Saffron is wonderful for helping liver discomfort and pain. Fresh raspberries are great for anemia. The combo had an aphrodisiac affect on my being.
Lettuce
Avoid iceberg. This seems to create more cysts around kidneys. It has a calming effect and lettuce juice is supposed to be nice to have in the evening just before bed if one has difficulties in sleeping. From a Greek Vegan web site lettuce is thought to have aphrodisiac effects.
