Almond milk

Pour 3 cups of water over 2 cups of raw almonds soaking overnight to rid them of phytic acid. Place these pre-soaked almonds with  a  fresh 3 cups of

water. In a high speed blender (like a vita mix), blend  the almonds and water for several minutes until it resembles a thick cream. Line a large sieve or colander with a double thickness cheesecloth. I use unbleached muslin, single thickness. Place this over a wide bowl and allow it to drain, then grab the corners of the cloth, hold together securely, and squeeze to extract all of the milk, much like squeezing a tea bag to extract the remaining essence of the tea. Reserve the trapped pulp in the sieve for making almond flour. Almond flour can be used in candies and cookies to give these desserts a more cookie like consistency. Transfer the milk to a container and refrigerate up to 3 days.

Almond meal or almond flour

Spread the pulp on nonstick dehydrator sheet. Dehydrate at 105º F for 24 hours. Transfer the pulp to a food processor and grind to a silky flour. Store  in an airtight container in the refrigerator for up to 3 days. This can be used for the hemp seed candies or other cookies.

Cultured Dairy


If milk is something you cannot live without and are not willing to make your own almond, coconut or rice milk (I can well understand as this is a long process) then if you can use organic and the lowest fat possible or skim milks or goat milk this would be preferable. Soy milk is harmful to cystic livers. Cottage cheese is a very good source of dairy especially following a liver resection. I enjoyed this following my liver resection and got the small curd cottage cheese. In German this is known as quark cheese. If at all possible choose cultured dairy like cottage cheese, yogurt with added acidophilus; buttermilk, sour cream, plugra, or cream fraiche. It is better to avoid fatty creams like ice cream, whole cream, and half and half.

A number of local farmers' markets sell goat cheese. I love goat cheese, absolutely long for it. I had to stay away until after noon time to attend one farmers' market to wait until they sold out or I would have eaten one small brick all myself. They make a hard cheese variety with herbs included no additional salt. I awaken with cotton mouth whenever I eat dairy especially cheese or ice cream. These are very hard on the kidneys and the hormones are difficult for the liver. However there is a new designer cheese called dairy delicious especially designed for kidney patients and made with lower phosphorus. They also make a milk and a velveeta type of cheese. I have tried almond cheeses made from almond milk and other nut milk cheeses.

In preference order for health:

Goat cheese

Ementhaler or Swiss light cheese (with a low fat content) Jarlsberg Lite thin sliced deli reduced fat Swiss cheese 1 slice 3/4 ounce 2.5 grams fat,100 mg sodium

White smooth soft cheeses with a low fat content. Other white cheeses are preferable to the hard yellow cheese.

Low sodium white cheese soft is preferable

Monterrey Jack cheese has 9 grams of fat whereas light swiss cheese has 2.5 grams of fat. Estrogen is concentrated in the fatty portions.

Almond Milk Machine

I found a machine for making almond milk. Normally I use a blender and unbleached muslin cloth to strain the almond water mixture. This produces delicious almond milk that could even be used to make an all almond ice cream or an almond milk cheese. The above pictured machine heats the milk slightly. It requires that you pre-soak the almonds overnight in water. I am not endorsing this machine as I have never used this machine. I saw it once at a trade show.  I avoid soy and dairy because of extensive liver cysts.

-3 cups of mineral,  filtered, or tap water allowed to sit out overnight to dissipate any residual chlorine
