Alone by Daniel Leader This has
many recipes for non-yeasted spelt breads. His latest books: Panini Express: 70 Delicious Recipes Hot Off the Press and Local Breads: Sourdough and Whole-Grain Recipes from Europe's Best Artisan Bakers with some changes in his technique. These books are great for teaching oneself how to make non yeasted breads.

RAW UNCOOKBOOKS
Raw
The Uncook Book by Juliano Brotman. This one has a recipe for
essene bread that is sunbaked by using sprouted grains.
Raw by Roxanne Klein, Charlie Trotter. I have had the pleasure of dining
at Roxanne's in Larkspur, California - a delightful culinary experience
that is well equal to any fine experience in Europe. These uncooked meals
take a long time to prepare and are labor intensive. The chefs utilize raw nuts, raw vegetables,raw
fruits, and sprouted grains maintaining active enzymes that are abundant. Roxanne has closed her restaurant but still has take out,
equally delicious.
VEGETARIAN COOKBOOKS
The
Greens Cookbook by Deborah Madison who has her own website. She is my favorite cookbook author. She
encourages the reader to make use of readily available ingredients substituting
if you are unable to find a particular item. The salads are delicious and her pairings with vegetables and herbs just make each dish pop.

She is my favorite cookbook author and Greens Restaurant in Ft Mason
in San Francisco is a must for me whenever I visit the Bay Area. For

Charlie Trotters Vegetables by Charlie Trotter. Plan on
spending all day preparing these recipes. They are delicious but require
planning.

HEALTHY
Millennium Cookbook: Extraordinary Vegan Cuisine by Eric Tucker.
This cookbook uses seitan, wheat and soy products (I avoid soy seitan
and wheat as it makes my liver cysts grow). It is filled with heart healthy vegan
dishes. Millennium Restaurant is the number one favorite restaurant of vegetarians in
the USA. My personal favorite is Fleur de Lys in San Francisco on Sutter
Street and Greens Restaurant in San Francisco. To read about many vegetarian restaurants in San Francisco click here. For everyday eating, I enjoy Herbivore-Vegan Restaurant. The Pritikin cookbooks are heart healthy with many meat recipes. One will have to pick and choose from these recipes and check ingredients carefully.
COPING WITH KIDNEY DISEASE
Low
Protein for PKU. This book is written for PKU, however some have found the recipes are useful for a very low protein
diet. This is the book for 22 gram
protein diet supplemented with essential amino acids from Dr. Walser's
program at Johns Hopkins.
Coping with Kidney Disease by Mackenzie Walser MD Johns Hopkins
University Professor of Medicine. This is a useful, well-written and helpful
book when one is approaching dialysis or transplant. It is written for
the layperson, however parts are technical. Precise directions are given
as to how one can go about arresting the downward progression of kidney
disease once protein appears in the urine. Limiting protein to 22 grams
each day or 0.3 grams per kilogram of body weight, supplementing with essential amino acids, and maintaining alkalinity accomplishes
this. I have seen this work with 2-3 extremely well motivated individuals.
If dropping the daily protein intake before nephrotic syndrome develops
is helpful, this has not yet been established. The book uses sodium bicarbonate
to correct acidosis. A better alternative alkalizer might be sodium
citrate. Some unique observations are made by Dr. Walser:
• nausea and vomiting associated with anemia
• leg cramps - itching when the body is too acid
He corrects anemia early so it does not lead to LVH left
ventricular hypertrophy. Some have found, when taking iron
tablets, all natural rose hips vitamin C aides to increase iron
absorption. Dr. Walser goes over medications including many OTC’s
that can precipitate a decline in kidney functioning. Very

Reverse Aging by Sang Whang - a review
This author writes about drinking alkaline water. I tried water from a water ionizer. I have observed that individuals who drink this water without altering their diet, health is not as readily apparent as one does institute dietary lifestyle changes as well. There is information about a far
infrared device and the use of acid water to wash skin. Farmers dip fruits
and vegetables in acid waters to keep them crisper. I found this interesting
since most of the books on youthful skin talk of using acidic solutions.
His explanation seems plausible - that the skin needs the added acidity
to keep bacteria from invading and penetrating the skin. email

M.Ted Morter, Though it is about an alkaline diet, it is not geared specifically to kidney or liver disease.
