Buckwheat

Enjoy Buckwheat

Buckwheat helps kidney disease. This is gluten free. Roasted buckwheat groats tea or soba-cha lowers blood pressure and helps regulate blood sugar. Buckwheat chapattis are eaten in India to help regulate blood sugar. I remember this happening in India. Buckwheat removes toxins, reduces uterine problems, aids hypertension.

Buckwheat tea

Soba (buckwheat) tea is made from roasted groats. Buckwheat leaves is another form of tea. While buckwheat leaf tea may cause phototoxicity if consumed in extremely large amounts. Buckwheat contains rutin. "Blood glucose levels were helped by 19% when buckwheat was fed to diabetic rats. Buckwheat is not really a grain but a grass and it does not contain gluten. Individuals with celiac disease can eat it. Roasted tartary buckwheat grain contains more nutrients.

Kasha or Buckwheat Crêpes

Buckwheat crêpes are made in the Latin Quarter of Paris and the South of France. Buckwheat noodles or soba noodles are a wonderful Asian noontime entree, sometimes served cold. Kasha another name for buckwheat, is a puffed buckwheat cereal. Buckwheat is alkaline producing, along with millet, and the sprouted grains of amaranth, quinoa, wild rice and spelt.

Soba Buckwheat noodles

In Japan these are served cold in a salad and called soba noodles. Caution that these noodles do not contain wheat. Another way to look for noodles without wheat is to look for gluten free soba noodles.

How Did Eating Soba Originate?

The tradition of eating soba originated from the Tokugawa period, when the population of Edo (Tokyo) was considerably wealthier than the rural poor, who were more susceptible to beriberi due to their high consumption of white rice, which is low in thiamine. It was discovered that beriberi could be prevented by regularly eating thiamine-rich foods such as soba. Tartary buckwheat (Fagopyrum tataricum Gaertn) is a minor crop belonging to the Polygonaceae family that can be considered as sustainable crop thanks to its low input requirements.

Tartary Buckwheat vs Normal Buchwheat

Tartary buckwheat is darker and contains more of the nutrients. Tartary buckwheat seeds contained more rutin (about 0.8-1.7% DW) than common buckwheat seeds (0.01% DW). Tartary buckwheat seeds contained traces of quercitrin and quercetin, which were not found in common buckwheat seeds.
